Bok Choy: Also know as Chinese mustard has long, crisp, bright white stalks that support dark green leaves CARE & HANDLING > Ideal Storage Temperature: 33°-36°F. 90-95% relative humidity. Refrigerate immediately after receiving. DO YOU KNOW... • Also called Chinese cabbage, Napa, wong nga bok, siu choy (Chinese) and hakusai (Japanese), good quality product will be loose-leafed, and fairly heavy in relation to size. • Green to slightly pale leaves on Napa are better than yellow or white. Fairly thick and pliable leaves will be more tender and juicy. • Bok Choy contains no fat or cholesterol and is a good source of calcium. • Use both the stalks and leaves of bok choy for stir fry. Add the stalk slices first. Add the leaves just before serving as you would bean sprouts. • Also called pak choi, celery mustard and Chinese mustard, good-quality bok choy has long bleach-white, well-shaped and unblemished stalks. Bok choy stalks are crisp like celery but are not stringy. • When cooked, bok choy stalks are tender but crisp. • The dark green leaves are highest in vitamin content and flavor. |
